Summer is just around the corner, and with it, many of us hope to get outdoors more and be more active, as well as eat a little lighter. How about you? When it comes to eating light, it’s a great idea to take advantage of summer produce. It’s the time of year when stocking the refrigerator with plenty of fresh strawberries, blueberries and melons is easily and affordably managed. Strawberries usually come into season in May and June, and are at their most delicious. Blueberries and cantaloupes are usually next to ripen.
Berries can be used in many ways beyond desserts, toss some into a fresh salad for a delightful burst of flavors.
Try to work more vegetables into your families mealtimes. Did you know you can add any number of vegetables to simple scrambled eggs? Try everything from diced zuchinni or yellow squash to shredded cabbage. Simply saute the vegetables on the stove for a short time before adding in the beaten eggs and scrambling as usual. This instantly adds a vegetable to your family’s menu for the day.
